Katie's Low Fat Low Sugar, Egg Free Chocolate Chip Cookies
INGREDIENTS
3/4 cup applesauce
1 cup whole wheat pastry flour
6 tsp powdered Stevia
1 tbsp olive oil
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup rolled oats
1/2 cup Sunspire, Grain Sweetened Semi-Sweet Chocolate Chips
1/2 cup chopped walnuts (optional)
DIRECTIONS:
Preheat oven to 350, bake for 13 minutes.
When you put the dough on the cookie sheet you have to flatten it out yourself.
Don't expect these cookies to taste normal. They taste like soft granola bars with bittersweet chocolate chips, but they satisfy my cravings and they may satisfy yours too.

I also saw my obgyn today and everything is normal, the baby has a strong heartbeat and in 4 weeks I will be full term, whoo hoo!
While in the waiting area, I was looking through pictures on my phone from my trip to New York with Yohei for his All-Star break. It was awesome because he had 4 days off and we got to spend every minute together.

This is us just after we went kayaking on the Hudson River. I was about 29 weeks pregnant and it was quite an experience. I was sitting in the front with Yohei in the back. At times we paddled in sync, but there were other times when Yohei would plow forward so fast I thought we would tip over. Good thing I can swim.

Our hotel room was so gorgeous! We had our own kitchen and dining area, a huge comfy bed and couch, and a beautiful bathroom. It was nice to have a romantic and relaxing trip together before the baby arrives.


We also rented bikes and rode around Manhattan, went on a picnic, saw the statue of liberty, and ate lots of pizza. Oh how I miss NY pizza!

This is a picture from a truly enjoyable dinner. Yohei, Emi, Mina, Connie and I ate at Village Yokocho. We spent the whole evening laughing and talking, these girls are great! Mina gave me some of the most adorable baby clothes, bibs, receiving blankets, socks, and a toy. I can't wait to see our baby use them.
